Only Active document formats appear in the document formant drop box in Chart of Accounts, Customers, Jobs, and Default Check Format and  Default Invoice Format in Company Setup.  To prevent an outdated document type from being used, uncheck Active.

Document Formats may not be deleted if they are used in an account, customer, job or the company setup application.
